Ingredients

  • 1 cup basmati rice
  • 1/2 cup split black urad dal
  • 1 tsp cumin seeds
  • 1/4 tsp asafoetida (hing)
  • 1 inch ginger (julienned)
  • 2 dry red chilies
  • 2 tbsp ghee
  • Salt to taste

Preparation

    Wash

    Wash rice and dal together and soak for 20 minutes.

    Heat Ghee

    Heat ghee in a pressure cooker and add cumin seeds.

    Temper

    Add asafoetida, dry red chilies, and ginger to the ghee.

    Mix

    Add the drained rice and dal mixture; sauté for a minute.

    Water

    Add 3.5 cups of water and salt; stir well.

    Cook

    Pressure cook for 3–4 whistles until soft and mushy.

    Serve

    Serve steaming hot with extra ghee drizzled on top.

The ratio of water to the rice-dal mixture is vital for the perfect texture; use more water if you prefer a porridge-like consistency, or less for distinct grains.
