Ingredients

  • 2 cups whole wheat flour
  • 1/2 cup soaked urad dal
  • 1 tsp fennel seeds (saunf)
  • 1 tsp coriander powder
  • 1/2 tsp red chili powder
  • 1 pinch asafoetida (hing)
  • Oil for deep frying
  • Salt to taste

Preparation

    Grind Dal

    Grind soaked dal with spices into a coarse paste.

    Prepare Dough

    Mix the dal paste, wheat flour, salt, and 1 tbsp oil.

    Knead

    Knead into a firm dough using a little water if needed.

    Rest

    Cover the dough and let it rest for 15–20 minutes.

    Portion

    Divide into small, lemon-sized balls.

    Roll

    Roll each ball into a slightly thick, flat disc.

    Fry

    Deep fry in hot oil until puffed, crisp, and golden brown.

Pro Tip

For an exceptionally crispy Bedmi Puri that stays puffed for a long time, mix a couple of tablespoons of fine semolina (sooji) into the wheat flour while kneading the dough. Ensure the urad dal is ground coarsely rather than into a smooth paste; this gives the puri its signature texture and bite. Fry on medium-high heat to ensure the lentil cooks properly without soaking up excess oil.
