Ingredients
- 2 cups whole wheat flour
- 1/2 cup soaked urad dal
- 1 tsp fennel seeds (saunf)
- 1 tsp coriander powder
- 1/2 tsp red chili powder
- 1 pinch asafoetida (hing)
- Oil for deep frying
- Salt to taste

For an exceptionally crispy Bedmi Puri that stays puffed for a long time, mix a couple of tablespoons of fine semolina (sooji) into the wheat flour while kneading the dough. Ensure the urad dal is ground coarsely rather than into a smooth paste; this gives the puri its signature texture and bite. Fry on medium-high heat to ensure the lentil cooks properly without soaking up excess oil.
